This herring clip with almond potatoes is an excellent alternative for those who are not fond of the traditional sour herring. The lemon and honey pickled cucumber adds a unique twist, offering both sweetness and acidity to complement the pickled herring.
Ingredients (4 servings)
Lemon Pickled Cucumber
1/2 lemon
3 tbsp liquid honey
1 pinch salt
1/2 cucumber
1 red onion
2 tbsp coarsely chopped dill
Herring Clip
4 flatbreads
6 boiled cold medium almond potatoes
20 pieces of pickled herring
1 dl sour cream
Instructions
Lemon Pickled Cucumber:
Squeeze the juice from the lemon. Mix 3 tablespoons of lemon juice (for 4 servings) with honey and salt until the honey dissolves. Peel the cucumber and onion. Cut the cucumber into thin slices, removing the core. Slice the onion into thin rings. Roughly chop the dill. Combine the cucumber and onion with the lemon juice mixture and let it sit for at least 15 minutes. Stir in the dill.
Herring Clip:
Lay out the flatbreads. Slice the potatoes and arrange the slices evenly on one side of each flatbread. Spread the herring pieces and sour cream over the potatoes. Drain the lemon juice from the cucumber mixture. Top with the cucumber slices and then fold the flatbread into a clip.
